Yesterday my sister Tiny, her daughter Samantha and her husband who happens to be my favorite nephew named Adrian came over for breakfast. We had cantaloupe, sweet potato muffin pops, bacon, sausage, biscuits, fried potatoes and onions, over easy and scrambled eggs, strawberry jelly, bacon flavored syrup, orange juice, milk, and coffee.
If you were here with me this morning I would serve: Toasted everything bagels topped with cream cheese, lox, capers, sliced purple onions, boiled egg slices, heirloom tomatoes, and coffee.You need to come over this is a dream breakfast for me.
For lunch lets have my special southern comfort bacon cheese burger, french fried yams, and sweet tea. These burgers are special. Here’s a list of everything we need to prepare four (4) burgers. Season 26 ounces ground beef, I use 80/20 ground beef, generously with the follows spices: 1 1/4 tsp. kosher salt, 1 1/4 tsp. black pepper, 1/2 T. Worcestershire sauce, 2 tsp. granulated garlic, 2 tsp. onion powder, and 1/4 tsp. cayenne pepper. Mix everything together, do not overmix cause that will make your burger tough. Divide the mixture into 4 equal parts. Shape into a loose ball. Flatten out each ball into a patty about 1 inch thick and 4 inches round. Make a slight indention in the center of the patty with your thumb. Cook each patty, on medium heat for about 3-4 minutes. Take the patty out the pan wrap a piece of bacon around the outside of the patty, return to the pan. Flip one more time add 1 slice of blue cheese to each patty. Continue to cook on medium heat until the patty is done and the bacon is crisp. Now it’s time to dress your burger. 4 toasted potato rolls, 4 slices tomatoes, romaine lettuce, mustard, and mayonnaise.
Peel and cut the yams the same way you would if you were making french fries. Drop in hot grease. While they are frying make a mixture of salt, cinnamon, and sugar, stir together and set aside. Remove yams from grease when they brown put on a paper towel to absorb the greaseTransfer to a clean paper towel, sprinkle the salt mixture on the yams
