Easter Menu Ideas

Based on my belief and commitment Easter  signifies the end of lent and the resurrection of Jesus Christ.  As we go forward in our preparation of Easter Dinner let us thank God for his grace and mercy, for our faith, our family, our food, health and the joy of life.


We are going to kick off our Easter Dinner with delicious deviled eggs.


Boil and peel your eggs.  Once the eggs are cooled cut hard boiled eggs in half lengthwise.  All the recipes below are made with 7 large eggs.  Remove yolk, add to the recipes below and fill the whites:

The basic recipe:  ¼  cup of mayonnaise, ½  tablespoon sweet pickle relish, 1 teaspoon.  mustard, salt and pepper to taste.  Top with paprika.

Bacon Lettuce and Tomato:  Use basic recipe, fry 5 slices of bacon crisp 1 Roma tomato, sliced.  Add sliced Roma tomato and crumbled bacon on top.

Spicy: In basic recipe replace mayonnaise with yogurt; replace mustard with spicy mustard top with paprika. Top with red chili flakes.

Bar-B-Que:  In basic recipe reduce mayonnaise to 1/8 cups,  1 tablespoon cerole mustard, 2 tablespoons BBQ sauce.

Crab: 1 tablespoon  mayonnaise, 1 tablespoon sour cream, 1 tablespoon spicy mustard, 1 teaspoon lime juice, ½ stalk celery, finely chopped, 1 teaspoon red onions, minced, 4 ounces imitation crab meat. Top with slivers of cucumbers.

Cottage Cheese: Use basic recipe top with cottage cheese, chives, pimento and hot sauce.

Be inventive what would you add to your customized deviled eggs.
