COUNTRY GIRL CAVIAR
2 16-ounce cans of blackeyed peas, drained, 1/4 cup green bell pepper, diced, 1/4 cup celery diced, 1/2 cup purple onion, diced, 2 garlic cloves, minced, 1 jalapeno pepper, finely chopped (be sure to leave in the seeds), 1/4 cup cilantro, finely chopped, 3 small tomatoes, chopped, 1/2 cup cantaloupe, diced small, 2 teaspoons cumin, 1 teaspoon seasoning salt, 1/4 teaspoon black pepper, 1/4 cup Italian salad dressing
Drain black eyed peas and pour into a bowl. Add remaining ingredients to the bowl. Toss until everything is well blended. Serve with pita chips and scoop corn chips
