Cream Dream

Pasta with mussels with basil

Cream sauces are an excellent addition to any dish from appetizers to desserts.  My nephew loves cream sauces.  His cream dream is 30 weight brown gravy or garlic cream sauce which I make for him religiously for the last 27 years.   Here are 2 of my favorite cream dreams.

In a heavy saucepan melt 1/2 cup unsalted butter.  Add 2 minced garlic clove, 2 cups heavy cream, 1/4 teaspoon white pepper and 1/4 teaspoon chicken bouillon powder.  Stir everything all together.  Reduce heat and simmer for 5 minutes.  Remove from heat and slowly whisk in add 2 cups gruyere cheese.  Return to the stove once the cheese melts. Continue to simmer for another 5 minutes, add 1/4 cup chopped fresh parsley.

In a heavy saucepan melt 2 tablespoons of unsalted butter and 1/2 tablespoon of extra virgin olive oil.  Add 2 1/2 tablespoons self-rising flour, stir with a whisk until the oil and flour are incorporated.  Do not allow this mixture to brown.  Add 4 cloves of minced garlic continue to stir.  Add 2 cups of heavy cream, 1 1/2 teaspoon chicken bouillon powder and 1 teaspoon white pepper.  Continue to simmer for another 5 to 6 minutes.  Salt and pepper to taste.

What is your favorite cream dream?  I can hardly wait to see your recipes, your pictures and enjoy your family memories.
