Hump Day Meal

My hump day meal is a 1-pound Angus beef Jacque Rose cheeseburger and french fries.

Our shared recipe is how to prepare Perfect French Fries.

The secret to perfect french fries is double frying.  We start by cutting and soaking the potatoes in cool water for at least 45 minutes.  The reason we are soaking the fries is to remove the starch on the outside of the potatoes.  All that starch on the outside of the potato does not allow for the crispiest potato on the outside while being soft on the inside. When you are ready to fry . drain the potatoes and dry them with a paper towel.  Please be sure to to remove all the excess water before frying.  Heat the oil to 300 degrees for the 1st fry.  Fry the potatoes for no more than 5 minutes.  The purpose of this fry is to soften the potatoes.  Take a knife cut through a couple of potatoes, if the potato is soft remove them from the oil.  Drain the potatoes on a paper towel.  Get ready for the 2nd and final fry. Heat the oil to 400 degrees.  Put the potatoes back into the hot oil fry until the potatoes are golden brown. Remove your delicious, crispy golden brown fries drain on a paper towel. Salt to taste with seasoning salt, serve fries immediately with that Jacque Rose Cheeseburger.
