I’ve been asking all my cousins to tell me what recipes they would like to see on the blog or in the cookbook. My cousin James said he would like to see a recipe for meatloaf, cream style corn, cream spinach, and cornbread. Based on that request, today, we are fixing an easy breezy comfort dish that he will love. Meatloaf is the topic of the day I’ll prepare the other stuff another day.
Ingredients:1 tablespoon vegetable oil, 1 tablespoon unsalted butter, 1 large white onion, chopped, 1/2 teaspoon dried thyme, 2 teaspoon chicken tomato flavored bouillon, 1 1/4 tablespoon tomato paste, 1 teaspoon black pepper, 3 tablespoon Worcestershire sauce, 3 minced garlic cloves, 1/3 cup chicken broth, ketchup, 1 1/2 pound ground Angus beef, 1 pound ground chicken, 3/4 cup oatmeal, 2 large eggs, lightly beaten. Reserve 1/2 cup ketchup and 2 tablespoons brown sugar, mix to pour on top of meatloaf when you bake it.
Heat oven to 350 degrees. In a large bowl, combine all the ingredients, mix lightly, with your hands. The need to be thoroughly mixed, but make sure you don’t pack the meat tightly together. Dump into a loaf pan and shape. Evenly spread the ketchup mixture on top. Underneath the meatloaf pan place a pan of water. The water will ensure that the top of the meatloaf will not crack. I do this because I want a beautiful meatloaf that is aesthetically pleasing to the eye. Bake for 1 hour 15 minutes. Approximately 20 minutes before the loaf is done pour off pour off the grease. Slice and serve hot with cream style corn, cream spinach, and cornbread.
