It’s a tradition that my siblings and I gather together and celebrate the 4th of July with food, fellowship, and love. One of my jobs is to ready the meat for my big brother Bubby to cook. To this end, I am going to share my secret pork marinade and the recipe for my mustard BBQ sauce. If you don’t eat pork, this marinade will also tenderize and add flavor to beef, chicken, and lamb.
The first job in getting ready to BBQ is to marinade the meat. A good marinade will make your meat juicy, tender and tasty. Marinade Ingredients: olive oil, plain yogurt, lemon juice, Italian dressing, fresh minced garlic, apple juice, salt, and pepper. Combine all these ingredients and whisk together until smooth. Add these ingredients to a saucepan and bring to a boil. Remove from heat allow to cool. Pour the marinade into a turkey baking bag; add the ribs. Seal the bag and refrigerate for at leat 8 hours. Turn the bag to ensure all the meat has rested in the marinade. Remove the ribs from the bag and discard the marinade when you are ready to grill.
Mustard BBQ Sauce
1/2 cup yellow mustard, 1/2 cup stone ground mustard, 1/2 cup creole mustard, 6 slices of bacon fried, discard the bacon reserve the bacon grease, 2 tablespoons brown sugar, 3/4 cup apple cider vinegar, 1/4 cup balsamic vinegar, 3 teaspoons cayenne, 1 tablespoon dry mustard, 2 tablespoons chili powder, 2 tablespoons Worcestershire sauce, 1 cups chicken broth, 1 tablespoon liquid smoke, and bacon grease. Combine everything together in a saucepan, except the bacon grease and liquid smoke, and simmer for at least 45 minutes. Add the bacon grease and liquid smoke and continue to simmer for an additional 20 minutes. Whisk occasionally while simmering. Taste add salt and pepper to taste. Make sure you do not allow the sauce to stick or burn. I recommend you make the sauce 3 to 4 days in advance which will allow all the flavors to mix. Store in the refrigerator. Rewarm before using.
