CRAB BISQUE

That’s right stoney crab; wave goodbye cause you are going to be bisque in a minute

Homemade is great, but  the quick bisque below is easy and delicious. What makes this bisque smooth and thick is the cream soups, particularly the rice soup.

CRAB BISQUE

1   10 ½ ounce can cream mushroom soup,  1   10 ½ ounce can cream asparagus soup, 1   10 ½ ounce can of chicken and wild rice soup,  1 ½ cups milk, 1 1/2  cups heavy cream, 1/2 stick unsalted butter,  2 cups flaked crabmeat, 1/2 cup dry white wine, butter.

In a sauce pan dump the cans of soup.  Bring to a boil; add milk.  Add crabmeat. Cook for about 3 minutes.  The bisque should be a thick consistency.  If not, make a thickener, in a separate pan cook a little flour and butter until it forms a paste, then whisk in some chicken broth then whisk this mixture into your bisque.   Just before serving add wine and a pat of butter.
