We Have A Winner

Let’s all congratulate cousin Byron on his winning recipe.   The prize is an autographed copy of my cookbook.   The 1st Edition of Cooking With Jacque Rose  will be published in August.  I will personally hand deliver Cousin Byron with his copy.

Here’s his winning recipe:  PEANUT BUTTER STEW

1 pound stew meat, 2 tablespoons oil, 1 onion diced, 1 tomato diced, 1 quart water, 1 tablespoon chicken bouillon, 3 teaspoons creamy peanut butter.  Season meat with salt and pepper.  Add oil to dutch oven, add meat and sear for 2 minutes.  Remove meat set aside.  Add onion to oven and cook for 2 minutes, add tomatoes, cook for 2 minutes.  Add meat back to the oven.  Add water and chicken bouillon.  Bring to a boil then lower heat to a simmer.  Continue to simmer until the liquid is reduced by approximately 25 percent and thickened. Add peanut butt, simmer for another 30 minutes; the liquid should be the consistency of gravy.  If the liquid is not thick enough add 1/2 teaspoon of baking powder.  Stir in baking powder.  Cook for another 15 minutes.  Serve over rice.
