RED BREAD

My Daddy liked crispy sweet bread.  Red bread is what he called any sweet bread hence this recipe is dedicated to my Daddy Printes Hodges also known to the family by this nickname Pawnee.

Ingredients:  2 cups cooked rice, 3  eggs beaten,  ¼ tsp. vanilla ,   ¼ tsp. almond extract, ½ tsp. nutmeg, ½ cup sugar, ½   tsp. salt, 3 tsp. baking powder, powdered sugar for dusting, and oil for frying.  Combine cooked rice, eggs, vanilla and nutmeg in a bowl.  Mix well.  Add dry ingredients to rice mixture and stir well.  Heat oil in skillet—drop mixture by the spoonful into the oil until golden brown on both sides.  Drain on a paper towel.  Dust with powdered sugar.
