Kale is low in calories, high in fiber and has zero fat. Kale is an excellent source of vitamins A, C, E and K as well as vitamins B1, B2, B6 along with fiber, calcium, potassium, iron, magnesium, omega 3 fatty acids, protein, folate, and niacin. Kale is a super food. I eat kale a couple of times a week, kale is the king of greens.
4 cups chopped kale, 1/8 teaspoon seasoning salt, 1 small avocado, sliced, 1 cup sliced strawberries, 1/2 cup pineapple, chopped, 1/3 cup pecans, roughly chopped, 1/8 cup red onions, sliced, 1/4 cup crumbled blue cheese.
First things first, sprinkle the salt over the kale. Rub the kale until the leaves turn a darker green. Rubbing the kale with salt darkens the color and tenderizes the greens. Now remove the stems and put the kale in a large bowl. Add the remaining ingredients and toss. Dress with creamy Blue Cheese Dressing.
