
Bruschetta pronounced (bru’sketta) is an appetizer from Italy. Bruschetta usually consists of grilled bread rubbed with garlic and topped with olive oil and salt. My daughter made two delicious bruschettas.
2 French baguette. Slice the bread diagonally into 1/2 inch pieces. Brush each slice, on one side, with olive oil and toast in the oven until lightly brown on both sides. Top evenly with the following ingredients.
Pesto Bruschetta: 1 pound Roma tomatoes, seeded and thinly sliced, 1/4 cup thinly sliced red onions, fresh shaved Parmesan set aside. In a bowl mix 1/2 tablespoon balsamic vinegar, 1 tablespoon Uno oil, 1/4 teaspoon seasoning salt, 1/4 teaspoon pepper, 1/4 teaspoon granulated garlic. 2 tablespoons pesto and 2 tablespoons capers, drained. Assemble: Spread the Uno oil mixture on the toasted bread. Liberally spread the pesto. Add a slice of tomato, a slice of onion, capers and Parmesan.
Salami Bruschetta: 20 arugula leaves, 2 large sliced avocados, 20 slices hard salami. In a bowl mix 1/2 tablespoon balsamic vinegar, 1 tablespoon Uno oil, 1/4 teaspoon seasoning salt, 1/4 teaspoon pepper, 1/4 teaspoon granulated garlic. Assemble: Spread the Uno oil mixture on the toasted bread. Layer arugula, avocado, salami.
