Homemade Flour Tortillas

Tortillas origin is Mexico.  Flour tortillas are unleavened flat bread originally made by the Aztecs.  Tortillas date back before Jesus. Ray Gonzalez, has written a poem honoring the tortilla.  Please take a moment to read “Praise the Tortilla.”

Today we are making a veggie wrap. Ingredients:  2 (12-inch) jalapeno cheese tortillas, 3 tablespoons refried beans (from a can of beans), 2 1/2 tablespoons sour cream,  1 cup baby spinach, 1/2 cup shredded sharp cheddar cheese, 1/2 cup peeled and chopped Persian cucumbers,  1/4 cup chopped black olives, 1/2 cup sliced red onions, 1/4 cup chopped cilantro, 1 large avocado thinly sliced,  2 tablespoons chopped fresh jalapeno peppers,2 tablespoons chopped walnuts.

Spread the cream cheese and refried beans on the tortilla.  Layer the ingredients as listed above down the center of the tortilla.  Wrap and fold the filled tortilla.
