RED EYE GRAVY

Scrape up all the dripping; that’s where your flavor is

Add a little shortening to a heavy skillet, fry ham steak (2-inches thick) until crispy around the edges, remove ham from skillet. Scrape up drippings and residue.  Add 1½ cup black coffee,  1½ tablespoon flour,  ½ teaspoon seasoning salt,  ¼ teaspoon pepper, ¼ teaspoon brown sugar,  ¼  teaspoon cayenne, 1 tablespoon butter, ¼ cup coke and whisk until smooth.   Simmer for at least 5 minutes. Wha’la the best red eyed gravy you have ever had.
