
Beets are delicious and are high in immune-boosting vitamin C, fiber, magnesium, iron, protein, and potassium. According to Green Living eating beets can help you fight cancer, they reduce arthritic pain and may help you lose weight.
In an attempt to eat healthy while eating great tasting dishes I have created a beet salad. Ingredients: 1 (3-ounce) package of lemon gelatin, 1 cup boiling water, 3/4 cup beet juice, 3 tablespoons distilled white vinegar, 2 tablespoons onion juice, 3/4 cup diced celery, 1 (14.5-ounce) can drained shoestring beets, 1/2 teaspoon seasoning salt, 2 tablespoons horseradish, 1/4 cup diced jicama, 2 teaspoons crumbled blue cheese, 1//4 cup chopped walnuts.
In a large bowl dissolve gelatin in water. Add the beet juice and vinegar to the bowl. Set aside and allow to cool. Once the mixture is cool, add the remaining ingredients except blue cheese and walnuts. Pour the beat mixture into a mold and refrigerate until firm. When ready to serve sprinkle blue cheese and walnuts on top.
