My grandson Robert loves meatballs. Whenever I see him I try to prepare meatball something. Today I am preparing Meat Ball Soup.
INGREDIENTS: 1/2 pound lean ground beef, 1/2 pound ground veal, 1/2 cup bread crumbs, 2 tablespoo22nd butter milk,1/2 small onion, finely chopped onions, 1 stalk celery finely chopped, 2 tablepoons green bell pepper, finely chopped, 2 minced garlic cloves, 1/4 teaspoon black pepper, 1 teaspoon Worcestershire sauce, 2 quarts beef broth, 2 (8 oz.) cans stewing tomatoes, 2 beef bouillon cubes, 1/4 cup cooked long grain rice.
In a bowl crumble meats. Add bread crumbs, buttermilk, onions, celery, bell pepper, garlic, Worcestershire sauce, and rice. Mix all together, form meat balls, set aside. In a large pot add the remaining ingredients, bring to a boil. Reduce to medium, add meat balls, simmer for approximately 30 -35 Minutes. Serve with a slice of cornbread.
