CABBAGE AND DUMPLINGS

Hey, Cousin how y’all doing today?  Lets do something a little different today; I’m fixing cabbage, dumplings, fried pork chops, cornbread and glazed carrots for dinner.  How many of you have ever had cabbage and dumplings?

INGREDIENTS: 1 medium head of cabbage, 3/4 cup chicken broth,  3/4 cup distilled vinegar, 8 pieces of bacon, 1 tablespoon caraway seeds, 1 teaspoon granulated garlic, 1/2 teaspoon salt, 1/4 teaspoon black pepper.  DUMBLINGS:  2 cups biscuit mix, 2/3 cup milk, 8 pieces bacon, roughly chopped.

Fry off the bacon crispy.  Reserve the 1/4 cup bacon drippings.  Put the biscuit mix into a bowl, add the milk and bacon. Stir together until soft dough forms, knead slightly on a floured board. Take a heaping tablespoon of the dough and form into a loosely formed ball. Place the dough on top of the cabbage.  Steam uncovered for 10 minutes. Cover and steam for 15 minutes

Drop the When the cabbage is done drop the dumplings into the cabbage.

Roughly cut the cabbage. Dump the cabbage and the remaining ingredients, excluding the bacon, including the bacon drippings into a dutch oven and steam for 35 -40 minutes. When the cabbage is done, add the dumplings.
