
Yesterday was National Guacamole/Avocado Day. Sorry Cousins, I’m late. Here is a quick and easy avocado sandwich.
Ingredients: 2 sliced large ripe avocados, chopped cilantro leaves, 2 minced garlic clove, 1/2 cup alfalfa sprouts, 1 sliced portabella mushroom, 1/4 cup cream cheese, 1 small sliced red bell pepper, 1/4 cup crumbled blue cheese, 3 tablespoons mayonnaise, 4 over easy fried eggs, 2 heirloom yellow tomatoes, 8 slices of toasted sourdough bread.
Now it’s time to assemble your sandwiches. Toast the bread. Spread mayonnaise on 4 slices of bread. Spread the softened cream cheese on the other 4 slices of the bread. Sprinkle and spread minced garlic, salt, black pepper, dried rosemary, and dried cumin. Add the avocado slices, cilantro leaves, alfalfa sprouts, mushrooms, bell pepper, tomatoes, blue cheese and top with the egg.
I know I am a day late, but you have never had a better avocado sandwich. This sandwich pairs well with iced tea, lemonade, and Sauvignon Blanc.
