Whenever I have leftover mashed potatoes, I make potato tacos!
INGREDIENTS: 1 cup leftover mashed potatoes, 1 tablespoon dried cumin, 1/2 teaspoon fajita seasoning, 1/2 teaspoon granulated garlic, flour tortillas and seasoned flour for dusting. That’s all you need.
In a bowl add the mashed potatoes, cumin, fijita seasoning, and garlic mix well. Scoop out a heaping tablespoon of the potatoes, with your hands made a potato pattie log about the length of your tortilla and the width of two fingers. In a heavy skillet, heat 1-inch of oil til hot. Roll the potato log in the seasoned flour, drop into the hot oil. Fry until golden brown and crispy on both sides. Remove from the oil and drain on a wire rack. The potato log will be crispy on the outside while still soft and creamy on the inside. Assemble your taco as you normally do. I fry off flour tortillas til crispy. My condiments include Mexican blend cheese, queso fresco, chopped white onions, fresh jalapeno peppers, chopped cilantro, shreeded romaine lettuce, and chopped firm tomatoes.
