SHORTBREAD SANDWICH COOKIES

Prepare your sandwich twixt and between spread first.  In a bowl combine 1 (4oz.) package softened goat cheese with 1/2 cup finely chopped pecans, mix well cover with plastic wrap refrigerate and set aside till you are ready to assemble the cookie sandwiches.

Cookie Ingredients:  1 cup softened butter, 1/2 cup powdered sugar, 2 cups sifted cake flour, 1/4 teaspoon baking powder.  Add butter to a bowl, beat with a hand mixer until the butter is fluffy, add the sugar and continue to beat until this mixture is creamy.  In another bowl dump the flour and baking powder.  Gradually add the dry ingredients to the butter mixture, mix well.  Pour the cookie dough into a piece of wax paper and roll into a  1/4-inch  log, refrigerate until the dough is firm. Remove from the refrigerator cut into 1/2 inch pieces.  Place the cookies on a cookie sheet. Bake in a 300-degree oven for about 30 minutes or until the cookies a lightly browned.  Remove from the oven remove from the cookie sheet and cool on a wire rack.  When the cookies are completely cool, spread a 1/8 inch layer of the cream cheese mixture.  Top with another cookie and set aside.  You now have created CRACK SHORTBREAD COOKIES.
