Fall and football says quiche. In celebration of Thursday Nite Football, I am making a crustless quiche.
SMOKED SALMON FOOTBALL QUICHE
18 crumbled butter crackers, 2 1/2 tablespoons grated Parmesan cheese, 1/4 teaspoon nutmeg, 1/4 teaspoon salt, 1/4 teaspoon white pepper, 1 cup shredded mozzarella cheese, 1/2 cup finely chopped asparagus, 1/2 cup chopped carrots, 8 large eggs, 1 1/2 cups chopped smoked salmon, 3 tablespoons sour cream, 2 tablespoons finely chopped green onion tops, 3 tablespoons drained capers, 1 1/2 tablespoon cayenne.
Preheat oven to 350 degrees. Crumble crackers into a bowl, add cheeses, salt, pepper and nutmeg, mix well and set aside. In a bowl beat eggs well, set aside. Chop asparagus and carrots into a bowl, add 2 tablespoons of chicken broth, put in the microwave for 3 minutes on high. Remove from microwave and set aside. Spray muffin tin with non-stick cooking spray. Reserve 1/2 cup of the salmon, set aside. You are going to evenly divide the ingredients into 12-muffin tins. Spoon the asparagus into the muffin tin, top with the cracker and cheese mixture, pour in the eggs. Bake for 20 minutes. Remove from oven set aside; cool then turn out of the pan. Evenly top each muffin with the reserved salmon, green onions, capers, sour cream, and cayenne.
A perfect Thursday night dinner would be: Smoked Salmon Football Quiche, Tossed Green Spring Salad, Sweet Tea, and Coconut Cream Pie. What are you going to have for dinner?
