Today I am declaring October 3, 2017, National Comfort Dessert Food Day.  After the game tonight I am having RICE PUDDING for dessert.


Ingredients:  2 cups cooked long grain rice, 2 cups condensed sweetened milk, 2 teaspoons vanilla extract, 1/4 cup toasted coconut flakes, 1/4 cup raisins.

In a bowl soak the raisins in the milk for at least 10 minutes.  In a heavy pot, dump the rice, and milk.  Cook on medium heat for approximately 20 minutes or until the rice thickens.  Remove from the heat add the extract and coconut, mix well.  Pour the rice into a serving dish, sprinkle nutmeg on top and serve.
