ASPARAGUS CASSEROLE

Asparagus pairs well with steak

 

A perfect dinner tonight would be a medium rare grilled ribeye steak, twice baked potato, asparagus casserole, tossed green salad with thousand island salad dressing, kool-aide and coconut cream pie for dessert.

Ingredients: 6 slices fried bacon, crumbled, 2 large chopped boiled eggs, 1/2 cup crumbled potato chips,  3 tablespoons butter, 1 pound asparagus, bottom trimmed, 1/3 cup slivered almonds, 1 cup grated Parmesan cheese, 1 (14.5 oz.) can asparagus soup, 1/4 cup sour cream, salt and pepper to taste.

In a heavy skillet melt butter, add asparagus and stir until the asparagus is covered in butter, add salt and pepper cook for 3 -5 minutes, stir in almonds mix well.  Add the soup, and sour cream, mix. Taste add salt and pepper as needed.  Pour into a greased casserole dish.  Bake in a 400-degree oven for 20 minutes.  Remove from the oven sprinkle with crumbled potato chips, bacon, and eggs.
