
Funnel cakes date back to medieval Arabic and Persian times. German immigrants brought the yeast-risen “drechter kuche,” or funnel cake to America around 1879. Whenever I think of a festive time, I think of food. One of those foods is funnel cake. My secret to perfect funnel cakes is pancake mix.
Get out a heavy skillet. Pour approximately 1 1/2 inches of vegetable oil into the skillet. Heat the oil to 375 degrees. Get a box of your favorite pancake mix. Follow the directions. Pour the batter through a funnel into the skillet with a circular motion. Fry to a golden caramel brown color. When done they will float to the top of the skillet. Take your cakes out of the skillet and drain on a wire rack. While still warm sprinkle with powdered sugar.
