LEFTOVER BREAKFAST

I woke up this morning starving. Today, I am having an apple omelet with some leftover BBQ spareribs.

APPLE OMELET

5 medium thinly sliced Granny Smith apples, 3/4 tablespoon butter, 1/2 cup sugar, 1/8 teaspoon cinnamon, 3 large slightly beaten eggs.

Add the butter to the skillet and melt.  Add the apples and slowly cook until the apples are soft. Remove from the heat, mash the apples to a puree, add sugar, eggs, and cinnamon mix well.  Pour the apple mixture into a shallow greased baking dish and bake in a 275-degree oven for 15-minutes or until browned.
