QUINOA SALAD

GREAT SALAD THAT  CAN BE EATEN AS A MEAL

 

I am going to decrease my carb intake and increase my protein. I have a goal to become physically fit and lose 15-pounds in the next 12-months. My first step is to add different and healthier foods to my diet, like this quinoa salad.

QUINOA SALAD

Quinoa (pronounced keen-wah) is cooked very much like rice. In a heavy pot add 1 cup of quinoa and 2 cups of water  Bring  a boil then reduce to a low heat, cover and simmer for 12-15 minutes or until all the water is absorbed.  Remove from the heat, set aside to cool and dry out completely.

Dressing: 1/4 cup extra virgin olive oil, 1 tablespoon red wine vinegar, 2 juiced  limes, 1 teaspoon dried cumin, 1 teaspoon red pepper flakes, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Combine everything in a bowl and whisk together.

Salad:  5 Persian cucumbers peeled and diced, 1 small chopped onions, 1 large cored and chopped heirloom tomato,  1 small bunch chopped flat leaf parsley, 1 medium diced avocado, 1 small bunch chopped mint leaves, 2 minced garlic cloves, 1/4 cup chopped cilantro, 1/4 cup sunflower seeds, 1/8 cup chopped pitted black olives, 1/4 cup crumbled feta cheese.

In a large bowl add the salad, quinoa, and dressing mix well. Refrigerate and serve when cool.
