
SWEET POTATO SALAD
2 cups cubed cooked sweet potatoes, 1 peeled chopped red delicious apple, 1/2 cup chopped celery, 1 (11 oz.) can mandarin oranges, drained, 3/4 cup. chopped pecans, 1 (8oz.) can pineapple tidbits, drained, 1/4 cup finely diced Vidalia onion, 2 tablespoons chopped red bell pepper, 2 sliced green onions, 1/2 teaspoon cumin, 1/2 cup sour cream, 2 tablespoons orange juice, 1/2 teaspoon salt, 1/4 teaspoon black pepper.
In a large bowl add the sweet potatoes, apple, celery, oranges, nuts, pineapple, bell pepper, and green onions. In another bowl combine the sour cream, cumin, orange juice, salt, and pepper, mix well. Add the sour cream mixture to the potatoes, fold in be careful not to break up the potatoes too much. Refrigerate until ready to serve.
