IT’S CHILI COLD

CHILI BEANS

1/2 pound dry black beans, 3 bay leaves, 5 cups chopped heirloom tomatoes, 2 medium white onions, chopped, 1 small green bell pepper, chopped, 3 garlic cloves, 1/2 cup parsley, chopped, 1/2 cup butter, 1 jalapeno chili, finely chopped, 1/3 cup chili powder, 2 tablespoons  dried cumin,  1 1/2 pounds smoked sausage, cut into 1/2 inch cubes, 2 tablespoons seasoning salt, 1 teaspoons chicken bouillon,  1 1/2 teaspoons black pepper, 1/2 teaspoon sugar, and 1 1/2 pound medium peeled and deveined shrimp. Topping:  1 cup sour cream, 1 1/2 cup grated sharp cheddar cheese, 6  green onions, chopped, 3 limes.

 Soak beans in water to cover for at least 6-hours. Drain, add beans to a heavy pot, cover with cold water, add bell pepper, tomatoes, onions, garlic, salt, pepper, bay leaves, bouillon, chili powder, jalapeno chili, and cumin. In a skillet add butter then saute sausage until brown, add sausage to beans.  Simmer covered for approximately 45-60 minutes. In another skillet add 2 tablespoons butter and seasoned shrimp saute till the shrimp curl and turn orange. When you are ready to serve top the chili with the sauteed shrimp, sour cream, cheese and green onions.
