I got this recipe from grandma Chalie, made a couple of changes, but it’s basically her recipe.The biggest change is I have added jalapeno peppers.
1 3/4 cups self-raising flour, 1 tablespoon baking powder, 1/4 cup brown sugar,1/2cup yellow corn meal, 3/4cup butter flavored shortening, 1 (10-ounce) pack frozen whole kernel corn, thawed and drained, 2 jalapeno peppers, chopped, 1/2 cup heavy whipping cream.
Preheat oven to 400 degrees, In a bowl, add all the dry ingredients. With your fingers add the shortening combine until the dough is crumbly. Fold in the corn, peppers, and cream. Stir together just enough that everything is moist. Turn the dough out onto a lightly floured surface. Pat out to 1-inch thickness. Cut with a biscuit cutter or a 2-inch glass. Place on a cookie sheet 1-inch apart. Bake for 15 minutes or until light brown.
