Today we are gonna serve two (2) of my favorite things to eat salmon and avocado.
MAPLE GRILLED SALMON TOPPED WITH AVACADO BUTTER
Avocado Butter: 1 large avocado, peeled and pitted, 1 tablespoon lemon juice, 1/2 stick butter, softened, 1 garlic clove, minced, 2 teaspoons dried cumin, 1/4 teaspoon cayenne, 1 tablespoon finely chopped fresh cilantro. Dump everything into the food processor and process until smooth. Refrigerate for about 3-hours then serve.
1/2 cup maple syrup, 1 1/2 tablespoon light soy sauce, 2 garlic cloves, minced, 1/4 teaspoon chicken bouillon, 1/4 teaspoon granulated garlic, 1/2 stick butter, melted, 1/8 teaspoon yellow mustard, 1/4 teaspoon lemon juice, 1/8 teaspoon black pepper, 1 pound wild salmon.
In a bowl, mix the syrup, soy sauce, garlic, bouillon, granulated garlic, mustard and black pepper, mix well. Place the salmon skin side up in the bowl with your glaze cover and refrigerate for 30-minutes. Lighty grease the grill put the salmon on the grill skin side down. Generously spread the glaze on the salmon, cook for approximately 4 minutes, turn and cook for another 4-5 minute. Serve salmon on top of a bed of steamed rice and top with avocado butter.
