I am the popcorn aficionado. Here is my quick and easy Caramel Popcorn Ball recipe.
Caramel Popcorn Balls
2 quarts yellow organic popped corn,4 tablespoons butter, 3/4 pound vanilla caramels, 1/2 cup light corn syrup, 1 cup condensed sweetened milk, 1/2 teaspoon vanilla extract, 1/2 stick soft butter, 1 cup pecan halves.
Put the popped corn in a pan and put it in the oven on 200 degrees to keep warm. In a pan, with a candy thermometer, add 4 tablespoons butter, sugar and corn syrup. Heat and stir constantly, bring to a boil. Turn the heat down, slowly add the milk continue to stir. When the thermometer reaches 238 degrees, add the vanilla, mix well. Pour this syrup over the popcorn and stir. Make sure all the kernels are coated. Butter your hands, pick up the popcorn and roll it into a ball about 3 1/2 to 4 inches.
