SOUTHERN FRIED APPLE TARTS

My MaMaw, Emma made the best apple tarts in the whole wide world.  If you have apples, sugar, butter, cinnamon, and store bought biscuits, you too can make the best apple tarts in the whole wide world.

SOUTHERN FRIED APPLE TARTS

6 medium size Granny Smith apples, 1/3 cup unsalted butter, 3/4 cups sugar, 1 tablespoons cinnamon, 1/8 teaspoon salt, 1 tube of commercial biscuits. Topping: 3 tablespoons sugar and 1 tablespoon cinnamon.

In a bowl mix the sugar, salt, and cinnamon mix well and set aside. Core apples, do not peel them. Slice the apples into 1/2-inch rings, set aside.  In a heavy skillet melt the butter.  Arrange and fit the apple rings around the bottom of the skillet. Pour half of the sugar mixture over the apples.  Cook over medium heat for 3-minutes. Flip the apples and pour the rest of the sugar over the apples, cover and lower heat, cook for another 5-minutes.  Set aside and allow to cool.  Bust open the biscuit can, roll out the biscuits to about 2-inch circles, put a couple of apples into the center of the biscuit dough.  Fold in half and crimp with a fork tine.  Pull out the skillet pour in some oil and fry until brown on both sides.  Remove from the skillet, while still hot sprinkle the sugar and cinnamon on top.
