I’ve been told I am as country as brown eggs. For all, you city folks out there please know that hens lay white, brown or green eggs. In my individual country vain I have created, just for you, a yam black bean burger.
YAM BLACK BEAN BURGER
1 cup of canned cut yams, 1/4 cup bell pepper, finely chopped, 1 (15 oz.) can black beans, rinsed and drained, 1 small red onions, finely chopped, 1 tablespoon cornstarch, 2 tablespoons cold chicken broth or water, 1 cup cooked brown rice, 2 tablespoon ground cumin, 1 large egg, beaten, 1/4 teaspoon cayenne, 1/2 teaspoon seasoning salt, 1/4 teaspoon black pepper, 1/4 teaspoon granulated garlic, oil for frying, and 6 Kaiser rolls.
In a bowl add the yams and beans mash together well. In a cup add the cornstarch and broth, mix until there are no lumps add to bowl. Add onions, egg, rice, cumin, cayenne, salt, and pepper, mix well. Shape into 6 burgers. Get out a large heavy skillet add about a tablespoon of oil to the skillet then add the yam patties, cook patties for 4 to 5 minutes on each side or until they are browned. Remove from the skillet. Cut the rolls in half lengthwise, with your hand scoop out most of the bread on one side of the roll. Toast the rolls in the oven and dress with mayonnaise, sliced avocado, sprouts, lettuce, sliced red onions and BBQ sauce. Serve with baked carrot fries. Yummy, yummy, yummy!
