PICKLED BEETS
8 small beets, 1 large red onion, 1 cup wine vinegar, 2 teaspoons salt, 3/4 cup sugar, 1 1/4 cup water, 1/2 teaspoon dry mustard, 1/2 teaspoon thyme, 1 tablespoon olive oil.
Brine: In a large heavy pot add the vinegar, salt, sugar, water, mustard, thyme and olive oil. Bring to a boil, reduce heat to a simmer, stir until the sugar dissolves, continue to cook for another 5 minutes. Remove from the stove, set aside.
With a vegetable brush clean the beets, cut off the stems. Dump the beets and the stems into a pot, cover with water, bring to a boil. Reduce heat to a simmer cover the pot and cook for 15-minutes or until the beets are fork tender. Remove from the stove drain and allow to cool. When the beets cool peel off the skin using your fingers or a knife. Slice (1/2 inch thick) dump the beets into the cooled brine. This is a great tasty snack.
