A Nicoise Salad is a “composed” French salad where each ingredient is arranged on the plate separately in little piles, then drizzled with French salad dressing and extra virgin olive oil.
I always serve this salad with a chilled flute of champagne and crispy fried onion rings.
1 head butter lettuce, 3 cups cold sliced, cooked red potatoes, 3 cups chilled cooked quarter cut green beans, 4 heirloom tomatoes, cut in quarters, 2 cups cold canned albacore tuna, 1/2 cup pitted sliced black olives, 3 large hard boiled eggs, peeled and quartered, 10 anchovy fillets, 1 tablespoon minced basil, 2 tablespoons minced chives.
On a large platter break up the lettuce leaves, in the middle of the lined lettuce arrange the ingredients in little piles. When you are ready to serve drizzle French salad dressing, olive oil and sprinkle with the basil and chives.
