Baby try this Zucchini Bread, I promise you will sing it’s praises and say that this is the best zucchini bread you’ve ever had!
3 large eggs, 3/4 cup butter flavored shortening, melted, 2 1/4 cups maple syrup, 2 cups grated zucchini, 2 1/4 teaspoons vanilla extract, 3 cups flour, 1 teaspoon salt, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1 teaspoon ground cinnamon, 1 cup chopped black walnuts, 3/4 cups diced dates.
Preheat oven to 350 degrees. Grease and flour two 8′ x 4′ loaf pans. In bowl add the eggs, mix well. Add the cooled oil , syrup, zucchini and vanilla,mix well and set aside. In a separate bowl sift the flour three times, then measure out the 3 cups. Add the flour, salt, baking soda, baking powder, and cinnamon, stir together,add to the zucchini mixture stir again, just enough to ensure everything is moist. Fold in the nuts and dates. Pour into the loaf pans and bake for 50-60 minutes or until a butter knife inserted in the middle of the loaf comes out clean.
