Gumbo Z or Green Gumbo is traditionally made and served during Lent. Today is St. Patrick’s Day so something green is perfect.
3 tablespoons salted butter, 3 tablespoons of self rising flour, 6 garlic cloves finely minced, 1 large chopped white onion, 2 chopped jalapeno peppers, 1 1/2 pound of chopped greens (collards, kale, mustard,turnips and beets) 1 1/2 cups clam juice, 2 cups vegetable stock, 1 cup okra trimmed and roughly chopped, 1/2 pound chopped Portobello mushrooms, 1 teaspoon celery seed, 1 teaspoon dried oregano, 1 teaspoon smoky paprika, 1/2 teaspoon white pepper, 8 medium eggs, 1/8 teaspoon liquid smoke, 8 raw oysters, 2 cups of cooked white rice.
In a large heavy pot melt the butter add the flour stir together to make your roux continue to stir until you reach a light colored brown now I want you to add the garlic and onions continue til you smell the aroma of the onions and garlic. Add everything else except the rice and oysters. Cover the pot and cook for 30 to 45 minutes. Remove the eggs peel them and return them to the pot.
When you are ready to serve put a raw oyster, including the juice from the oyster shell at the bottom of the bowl the hot gumbo, chopped boiled egg and rice. The hot liquid will cook the oyster. Get ready for some good eating.
