lime jello


I have been eating this salad for years. I can’t remember who prepared this salad for me the first time, I do remember that I loved it, got the recipe and have been making this salad ever since.

Spring is here let’s have a delicious and refreshing spring salad: 1 (6 oz.) package lime gelatin, 2 cups hot water, 1 (6 oz.) package softened cream cheese,  1 (8 oz.) can crushed pineapple, drained,  1/2 cup diced celery, 1 cup chopped pecans, 1/2 pint whipped cream.

In a bowl add the gelatin, add the hot water stir until the gelatin is dissolved.  In another bowl, add the cream cheese, mash with a potato masher,  then add the remaining ingredients, except the whipped cream.  Fold this into the gelatin.  Refrigerate until it starts to thicken, this takes about an hour.  Remove from the refrigerator, add the whipped cream on top, return to the refrigerator until it sets, this will take another 2 hours.
