Today feels like the perfect day to make Shrimp Fritters. Fritters simply means fried. Consistent with my Southern tradition, everything is better fried. These fritters are the perfect fried appetizer.
6 ounces cooked salad shrimp, 1/2 cup shrimp broth, 3 tablespoons salted butter, 1/2 cup self rising flour, 2 beaten eggs, 4ounces bean sprouts, 1/2 teaspoons fish sauce, 1/2 cup grated goat cheese, salt and pepper to taste, oil for frying.
In a pot add the broth and butter bring to a boil. Slowly add the flour, stir with a whisk to ensure no lumps. This is perfect when the flour mixture leaves the side of the pot. Remove from the heat and allow to cool. In a bowl, add the eggs, sprouts, cheese, fish sauce, dump into the flour mixture and mix well. Add oil to skillet heat oil to 350 degrees. Scoop up a heaping tablespoon of the shrimp mixture drop into the oil and fry until golden brown on all sides. When done they will float to the top of the oil. I serve them hot with a side of tartar and spicy cocktail sauce.
