I met a very pleasant young man earlier this week, he told me his friend had given him a strike bass, he asked me how to cook it. Depending on where you live in the country striped bass is known by many other names like pimpfish or rockfish. The taste of the bass reminds me a lot of cod, sole or tuna. This is a very versatile fish when it relates to how you can cook it. I commonly deep fry, pan fry, bake, grill and poached striped bass. It’s a beautiful day so we are going to grill our bass.
This recipe is for 4 fillets. First things first we’re going to make a marinade. In a ziplock bag, add 1/8 cup extra virgin olive oil, 4 tablespoons fresh lemon juice, 3 minced garlic cloves, 1/4 teaspoon dried thyme, 1/2 teaspoon seafood bouillon, 1/8 teaspoon black pepper and 1/4 cup dry white wine. Add the fish to the marinade then refrigerate for least 45 minutes. While the fish is the marinade start up the grill. Drain the excess marinade off the fish and place on the grill. It takes approximately 10-12 minutes for the fish to cook, 5-6 minutes in each side.
