Chicken a la King
2 cups sliced fresh white mushrooms, 1/3 cup salted butter, 4 tablespoons flour,2 stalks chopped celery, 1/2 tablespoons bell pepper, 1/4 cup chopped white onions, 1/4 teaspoon seasoning salt,1/4 teaspoon black pepper, 1/2 cup evaporated milk, 2 tablespoons dry sherry, 1 1/2 cup low sodium chicken broth, 2 1/2 cup cooked diced chicken thighs, 1 cup cooked English peas, 3 tablespoons diced pimiento, 1/2 teaspoon sugar, 1 can of 4 biscuits.
Bake the biscuits according to the directions on the can. In a heavy skillet add the butter, melt. When the butter melts add the mushrooms and saute. Gradually add the flour, celery, bell pepper, salt, and pepper. When everything is combined add the sherry, milk, and stock. Reduce the heat to a simmer, stir together until the liquids thickens to a gravy consistency. Taste add salt and pepper as needed. Add the chicken, peas, sugar, and pimento, stir again. Serve atop the biscuits.
