What am I gonna do, I’m gonna eat breakfast. Eating breakfast is the most important meal of the day. People who eat breakfast have proven to be thinner and frequently healthier than those who do not. I suspect the reason is breakfast is usually loaded with protein and fiber. Protein and fiber as the first meal will add zest, energy, wards off hunger pains, and appetite low and high spikes.
1/2 cup cooked and drained breakfast sausage, 2 cups frozen shredded hash brown potatoes, thawed, 1/2 cup finely diced green onions, 1/4 teaspoon dried oregano, 1/4 cup shredded mozzarella cheese, 1 medium diced heirloom tomato, 4 medium eggs, salt, and pepper to taste.
In a skillet add about 1 tablespoon of oil, heat to medium high add breakfast sausage. Cook until browned, drain and remove from skillet, set aside. Clean the skillet, add 2 tablespoons of oil heat to medium high add the potatoes, onions, oregano, salt, and pepper mix well. Flatten the potatoes with a spatula to a thin layer over the bottom of the skillet. Fry for 5 – 7 minutes until the potatoes are brown and crispy. Flip over and fry until brown and crispy on both sides. Evenly add sausage and cheese. Put a top on the skillet for about 1 minutes, the cheese will start to melt. Take the top off the skillet crack the eggs on top and sprinkle with salt and pepper. Cook the eggs to over medium, sprinkle diced tomatoes on top and cut into wedges and serve.
