I went to the $.99 store today to pick up some stuff for dinner. Dinner tonight is going to be seafood stuffed portabella mushrooms, grilled asparagus, and sliced heirloom tomatoes. 4 mushrooms $1.98, 2 pound asparagus $1.98, 3 heirlooms tomatoes $.99, 6 ounces imitation crab, $.12, 1/2 cup Parmesan cheese $.50, 4 ounces small cooked shrimp $.97. I am gonna feed 4 four grown people a 3-course meal for less than $6.00. Don’t forget the tomato salad and a big buttery glass of Chardonnay.
4 medium portabella mushrooms, 6 slices bacon fried and chopped, 6 ounces imitation crab meat, chopped, 4 ounces cooked shrimp, chopped, 4 green onions, chopped, 1/4 teaspoon dried thyme. 1/2 cup grated Parmesan cheese, 1/3 cup mayonnaise, 1/8 teaspoon sugar, 1 teaspoon dry mustard, 2 teaspoons fresh parsley, finely chopped, 1 egg, 1/4 teaspoons paprika, 1 teaspoon seafood seasoning salt, and 1/4 teaspoon black pepper.
Heat oven to 400 degrees. Lightly grease a cookie sheet with butter, set aside. Remove the stems and gills from the mushrooms. Wipe off the mushroom caps with a damp paper towel, set aside. In a bowl combine the mayonnaise, egg, 1/4 cup cheese, mustard, parsley, sugar, onions, salt, and pepper, mix well. Evenly distribute this mixture into the mushroom caps. Drizzle lightly with extra virgin olive oil, sprinkle with paprika, top with the remaining cheese. Bake uncovered for 17 – 20 minutes or until the mushrooms are tender. Remove from the oven and sprinkle bacon on top.
