I  am starting early this year preparing homemade Christmas gift. Homemade fresh Strawberry Jam is from my heart to your house.


4 cups fresh hulled strawberries, 2 tablespoons fresh lemon juice, 2 ½  tablespoons powdered fruit pectin, 1 pat butter, 3 ½ cups sugar.

First things first, let’s get the canning jars ready,  I use 8-ounce Mason jars.  Wash the jars, lids, and bands in steaming hot soapy water, rinse and allow to dry.  Place the jars in a pressure cooker and add  ½ pot of water cover and bring to a boil once they have boil turn off the heat and keep warm until you are ready to fill the jars with jam.

Get out a heavy saucepan add the strawberries and pectin.  Turn on the flames to a medium heat and start stirring. Bring to a rapid boil and cook for at least 15-minutes.  Slowly add the sugar, continue to stir, cook for another 5-7 minutes. Add 1 pat of butter,  For all those that are not country as green eggs, a pat of butter is 2 ½ tablespoons. Stir until all the butter is melted, this takes about a minute.

Adding the butter reduces the amount of skim that forms on top of the jam.  Remove from the heat and remove the skim from the top, please make sure you use a metal spoon.  I do not know why it is imperative to use a metal spoon other than my grandma said so! Spoon the jam into the hot jars.  Allow the jars to slightly cool then refrigerate.
