We celebrated love, family, and food on July 2nd. I have at least four pounds of leftover BBQ chicken. My job now is to repurpose this chicken. I am going to make a sweet and spicy glaze to pour over the chicken. I am serving this dish with egg drop soup, steamed white rice, fried wontons and green beans.
SWEET AND SPICY GLAZE
1 (8 oz.) bottle Russian dressing, 1 envelope onion soup mix, 1 diced jalapeno chili, 1 (8 oz.) jar pineapple preserves, 1/2 cup fresh cubed pineapple, 1/4 cup sliced green bell peppers, 1/4 cup sliced red onions, 1/8 cup roasted peanuts.
In a bowl combine the salad dressing, soup mix, and preserve, mix well. Pour over the chicken and put in the oven at 350 degrees for 10-15 minutes or until the chicken is warm. Remove from the oven and top with the pineapple, bell pepper, onion and sprinkle the nut on top.
Serve with egg drop soup, steamed white rice, fried wontons and green beans.
