As a kid, I never had rice pudding. My father said there is something wrong when you add sugar to rice. I had rice pudding, for the first time when I was in my early 20’s. Below find my recipe, it delicious sugar rice.
RICE PUDDING
1 1/2 cup cooked basmati rice, 3 cups whole milk, 1 cup heavy cream, 4 large eggs, beaten, 1/2 cup sugar, 1/2 cup light brown sugar, packed, 1 teaspoon cornstarch, 2 teaspoons vanilla extract, 1/4 cup golden raisins, steamed in water and drained, 1 teaspoon ground cinnamon, 1/2 teaspoon mace.
Pour the milk and cream into a saucepan. Heat on a high heat until it almost boils. Remove from the heat and allow to cool. In a bowl add the eggs and slightly beat, add the sugars and mix well, then all the vanilla. Gradually temper in the warm milk, mix well. Add the rice and raisins ns mix again. Heat the oven to 350 degrees. Lightly grease, with butter, a 2-quart casserole dish. Add the rice mixture to the casserole dish. Sprinkle the cinnamon and mace on top. Add a pan with about 1 1/2 cups of water to the oven. Put the casserole dish into the large pan. Bake uncovered for 15-17 minutes, Remove from the oven and stir everything together again, return to the oven for another 30-minutes. Poke the center of the rice with a case knife, if the knife comes out clean the pudding is ready.
