CHICKEN CURRY

1/2 cup mayonnaise, 1/2 tablespoon mild curry powder, 1 teaspoon granulated garlic, 1 teaspoon salt, 1/2 teaspoon pepper, 1 tablespoon grated fresh ginger, 1 cup toasted flaked coconut, 1 1/2 pounds chicken thighs,

Preheat oven to 435 degrees. Lightly spray a cookie sheet with butter flavored spray. Spread out the coconut in a single layer and put in the oven for approximately 10-12 minutes or until the coconut flakes are lightly toasted. Remove from the oven and allow to cool. In a combine the mayonnaise, curry, garlic powder, salt, pepper, and ginger. 1/2 cup coconut and mix well.  Rub the mayonnaise mixture all over the chicken,  Line the cookie sheet with foil and place the chicken on the cookie sheet and bake for around 10-12 minutes.  Remove from the oven and sprinkle the remaining coconut flakes on top of the chicken, return to the oven and cook for another 10-12 minutes or until the chicken is thoroughly cooked.
