ASPARAGUS CASSEROLE
6 slices fried bacon, crumbled, 2 large chopped boiled eggs, ½ cup crumbled sour cream potato chips, 3 tablespoons butter, 1 pound asparagus, bottom trimmed, 1/3 cup slivered almonds, 1 cup grated Parmesan cheese, 1 (14.5 oz.) can asparagus soup, ¼ cup sour cream, salt, and pepper to taste.
In a heavy skillet melt butter, add asparagus and stir until the asparagus is covered in butter, add salt and pepper cook for 3-5 minutes, stir in almonds mix well. Add the soup, and sour cream, mix. Taste add salt and pepper as needed. Pour into a greased casserole dish. Bake in a 400-degree oven for 20 minutes. Remove from the oven sprinkle with crumbled potato chips, bacon, and eggs.
