Steam your favorite root vegetables until they are fork tender. While your vegetables are steaming make up your cheese sauce.
2 tablespoons salted butter, 1/2 tablespoon self-rising flour, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/8 teaspoon cayenne, 1 cup evaporated milk, 1 egg, 1/2 teaspoon yellow mustard, 2 tablespoons grated Parmesan cheese.
In a bowl add the flour, salt, pepper, and cayenne, mix well set aside. In another bowl add the egg, mustard, and milk. In a heavy saucepan melt, the butter gradually add the flour. Add the milk and continue to stir until your sauce starts to thickens, Now add the cheese and continue to stir until the cheese melts.
Your vegetables are ready the cheese sauce is ready now pour the sauce over the vegetables and serve.
