
1/2 cup butter, 2 eggs, 1 cup low-fat buttermilk, 1 cup yellow cornmeal, 1/2 teaspoon baking soda, 1 cup flour, 1/2 teaspoon salt
Preheat oven to 375 degrees. Grease your 8-inch cast iron skillet, melt the butter in the skillet. In a bowl add the eggs and beat them. Add the buttermilk and baking soda, stir well. Add the flour, cornmeal, salt and the butter from the skillet, stir until well blended. Pour into the skillet and bake for 30-35 minutes, or until a case knife is inserted into the center comes out clean.
